Spinach Patties

Ingredients:

  • 2 10 oz chopped frozen spinach
  • 1 large onion chopped
  • 3/4 cup bread crumbs (unflavored)
  • 4 large eggs beaten
  • Salt and pepper to taste
  • Cooking spray

3 Tbsp or as needed vegetable oil

Method

Thaw spinach and squeeze out water. Spray a large skillet with cooking spray. Heat a little oil in the skillet and saute onion until soft and translucent (5-10 minutes) Remove skillet from heat and add the spinach, bread crumbs, beaten eggs and salt and pepper to taste, Stir together, remove the mixture to a mixing bowl and mix well. Shape spinach mixture into patties. Spray a large stainless steel skillet with cooking spray. Heat about i/4 inch oil in the skillet. Fry spinach patties in batches until golden brown, turning once. Drain on paper towels.

Notes: This spinach absorbs a good deal of salt so you need to keep tasting it to see if there is enough salt. The size of the patties can vary, I like mine small. The amount of bread crumbs needed may vary so start with 1/2 cup at first and keep adding as needed.
