Apples ‘En Croute’

Ingredients :

4    x    apples, Granny Smith
peeled and cored
3    tbl    brown sugar
1/2    tsp    cinnamon, ground
50    gm    butter
1    x    eggs
SWEET SHORT PASTRY:
2    cup    flour, plain
1/4    tsp    salt
125    gm    butter
2    x    egg yolks
1/2    tbl    sugar (caster)

Method :

* Sweet short pastry:
Mix the flour and salt in a bowl. Rub in the butter with your fingers or a pastry blender until the mixture resembles coarse meal.
* Whisk the egg yolk, sugar and 2 tablespoons water together in another bowl add to the flour mixture, and blend until the pastry is smooth and hold together in a ball. Wrap in plastic and refrigerate it for at least 20 minutes.
* Divide into 4 and roll each portion out to a circle 12 cm diameter (big enough to enclose an apple).
* To finish:
Mix together sugar, cinnamon and butter. Place a whole apple in the centre of each pastry round, fill center with butter mixture. Lift edges of pastry up over apple and join at the top with a little beaten egg.
* Place on a greased oven tray with the join down, decorate with pastry leaves if desired, brush with beaten egg.
* Make a small hole in the top to allow steam to escape.
* Bake at 190C/380F for 25-30 minutes until pastry is golden brown and apple is tender. Brush with melted butter and serve.
* You can substitute puff pastry for short pastry in this recipe.
