STIR-FRIED BROCCOLI, MUSHROOMS, AND PEPPERS

2.50 tablespoons peanut oil (preferably roasted)
2.00 garlic cloves, minced
1.00 teaspoon finely chopped ginger
8.00 ounces broccoli florets (about 2 cup)
6.00 ounces fresh shiitake (stems removed) or white
1.00 tablespoon each rice wine vinegar, brown sugar
0.50 cup water or vegetable broth
1.00 red bell pepper, cut into long narrow strips
0.00 0 Caramelized Golden Tofu, cut in slabs (separate recipe)
2.00 scallions (green onions), including an inch
DIRECTIONS
Add the oil to a heated wok or large skillet. When hot, add the garlic and ginger and stir-fry for 1 minute. Add the broccoli and mushrooms; stir-fry for 2 minutes. Add remaining ingredients, except the tofu and scallions, then cover and cook until the broccoli is tender, 4 to 5 minutes. Add the Caramelized Golden Tofu and cook until hot, about 2 minutes more. Serve garnished with the scallions.
