Apple and Dried Fruit Bread Pudding
Ingredients :
3 cup Italian bread in 1″ cubes
3 cup skim milk
1/2 cup apple juice
4 lrg golden delicious apples peeled, halved, and cut in 1/2 inch cubes
1/2 cup raisins
1/2 cup dried apricots in 1/2 inch dice
3/4 cup egg beaters(r) 99% egg substitute
2 tsp vanilla extract
1 tsp cinnamon
Method :
* Let the bread and milk soak for 30 minutes.
* Heat apple juice with 1/4 cup of the sugar until the sugar is dissolved. Add apples and cook until apples are tender and no liquid is left in bottom of pan. Stir in raisins and apricots and remove from heat. Mix the fruit and bread mixture and cool to room temp.
* Preheat oven to 325F. Grease a 9 x 13 x 2-inch baking dish.
* Whisk egg substitute with remaining 1/4 cup sugar, vanilla, and cinnamon. Stir into the apple mixture until well combined. Bake until a knife comes out clean, about 55-60 minutes.
* Broil the top, until golden, about 1-2 minutes. Serve at room temperature.
